Over the summer, my husband grew 4 healthy sized pumpkins. Last night we wanted to reap the fruit of his labor, so we took one of them and made pumpkin bread. The recipe called for 2 cups of pumpkin but we had more like 3 1/2 cups after I got done scooping. We still have more from the first pumpkin, to make more bread, but this is what 1 recipe yielded. We also baked the pumpkin seeds, but I figured that was worth saving for another photoset. I was hoping to have the final shot with the pumpkin also being a jack-o-lantern, but we were pretty exhausted after a few hours of baking the bread and seeds.
